Roasted Feta Soup
A roasted vegetable and feta soup

Ingredients
- 1 (8-ounce) block feta cheese
- 1 red bell pepper, chopped
- 4 Roma tomatoes, chopped
- 1 onion, chopped
- 2 sprigs fresh rosemary
- 1 whole garlic bulb, unpeeled, top sliced off to expose cloves
- Pepper or other spices as desired
- ¼ cup olive oil
- 4 cups vegetable broth
Instructions
- 1Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
- 2Place the block of feta in the center of the pan.
- 3Arrange the chopped bell pepper, tomatoes, onion, and rosemary sprigs around the feta.
- 4Place the garlic bulb cut-side up on the pan.
- 5Season with your spices and drizzle olive oil over everything.
- 6Roast for 60 minutes or until vegetables are clearly browned
- 7Remove rosemary sprigs and discard the woody stems.
- 8Squeeze the roasted garlic cloves out of their skins.
- 9Transfer all roasted ingredients and pan juices to blender along with the vegetable broth.
- 10Blend on low, gradually increasing to high, until completely smooth.
- 11Transfer the blended soup to a pot and warm over medium heat until hot.
- 12Taste and adjust seasoning before serving.
Notes
- If the soup is too thick, add more broth or water while blending.
- For extra creaminess without dairy, you can stir in coconut milk after blending.
